Guacamole

A few years ago I spent X-mas with my family in Mexico. Now, being a full-throttle New England girl, I found something inherently wrong with celebrating this holiday without snow and while being on the deck of a cruise ship in the sun with a margarita. Wait, what? There is never anything wrong with being on the deck of a cruise ship in the sun with a margarita….
We spent one day with a crowd of increasingly fun people in a delightful program called “Salsa Salsa”. Margaritas and dancing (margaritas then dancing, remember I said increasingly fun?). And salsa making. More importantly, guacamole making. I won’t credit this vacation with all of my guacamole skills but it definitly didn’t detract! I am not a follow-the-recipe-girl but this recipe does well done simply, without a fridge of fire-roasted corn and black beans added in (although that’s not bad either).

Julia’s “worth-a-winterless-Xmas” Guacamole

Ingredients:

  • 2 ripe avocados
  • juice of 1/2 a lime
  • 1/2 jalapeno, seeded and minced
  • 1/3 tomato, diced
  • 2 Tbls red onion, diced
  • handful of cilantro, chopped*
  • Jalapeno hot sauce
  • dash of salt & pepper

Halve each avocado. To remove the pit, carefully tap the pit with the sharp edge of the knife and twist to remove the pit. Scoop out flesh into a medium sized bowl. Add lime juice, salt and pepper (add just a bit here, you can add more later if needed). Mash with a potato masher till fairly smooth (I like to leave some chunks).

Add tomato, onion, jalapeno, cilantro and hot sauce. Mix well. Season to taste. Serve with chips or crudite of any kind!**

*Don’t be afraid to use the stems-they have a lot of flavor. Just be sure to chop them finely!
**Rumor has it that leaving a pit in the guacamole will keep it green longer. This guacamole doesn’t last long enough in my home for me to be able to verify.
